Breakfast Options

Seed Breakfast 

2-3 tbsp seeds and nut (linseeds, almonds, pumpkin seeds, sesame seeds, sunflower seeds mixture (ground individually to coffee ground texture)

1-2 tsp psyllium or slippery elm powder,

½ cup plain (unsweetened), organic or biodynamic or raw yogurt with live cultures,

grated raw apple or stewed apple, pears or plums or berries, in winter may be added to cooked oatmeal, rice or quinoa porridge

 

Chia seed porridge

Serves about 4 people

 

For the chia porridge

4 tbsp chia seeds

1 cup hazelnut milk

1 tsp cinnamon powder

¼ cup light agave nectar

1 vanilla bean whole

  

For the garnish

1 granny smith apple, sliced

Crushed almonds or hazel nuts


Method

1. Blend hazelnut milk, cinnamon, agave and vanilla bean in a Vita-Mix until smooth.

2. Pour the hazelnut milk into a medium size bowl and slowly whisk in the chia seeds. Set in the fridge for 2 hours or over night

Bircher Muesli

1 cup hulled whole oats, soaked and sprouted 15-20 hr (or rolled oats, soaked)

1 apple, grated

1 banana, sliced

¼ cup raisins, soaked

¼ cup almonds, soaked

¼ cup sunflower seeds, soaked

½ lemon, juiced

½ orange, juiced

1 tbsp. lemon peel, grated (make sure you're using undyed lemons - organic is best)

 
Method

Soak in filtered water, just to cover, and the oats will absorb the water. (Rolled oats have been through two heat processes; first they are steamed and then they are flattened by rollers. The rollers build up heat in the process.)

Soak raisins, almonds and sunflower seeds overnight in separate little bowls, using filtered water, just enough to cover.

In the morning, drain the water out of the almonds and sunflower seeds, and rinse. Chop the almonds a little. The water you drain from the raisins can be used for drinking or in other recipes.

Mix the oats, apple, banana, raisins, almonds and sunflower seeds in a bowl. Pour in the lemon and orange juices, add grated lemon rind and mix well.

Serves 2 or 3 . . . or 1 hungry person!

VARIATION: Instead of the apples and citrus, use papaya or mango and fresh pineapple juice.
