Sweet Treat Recipes

Eating healthy can also be sooo tasty. The following as some easy ways to keep your blood sugar stable between meals and top up on extra nutrients too. these snacks all have a healthy balance of carbs, protins and fats with the addition of some super food power. The carrot cake is a little extra effort but well worth it.

Sweet treat Recipes


Goji Maple Granola

  • 1 apple cored and chopped
  • 1 ½ cups of date paste
  • ½ cup maple syrup
  • 2 tbsp lemon juice
  • 2 tbsp orange zest (or grated ginger)
  • 1 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ cup desiccated coconut (or ½ cup sunflower seeds)
  • 2 cups of almonds soaked for 4 hours or more
  • 3 cups of pecans soaked for 2 hours or more
  • 1 cup pumpkin seeds soaked 2 hours or more
  • 1 cup of goji berries (or cranberries dried apple, dried banana, dried apricot)

In a food processor place the apple, date paste, maple syrup, lemon juice, orange zest, vanilla and cinnamon. Grind till completely smooth, remove to mixing bowl

Add the nuts, seeds and coconut to food processor (no need to clean) pulse chop then add to the bow along with the goji berries and mix well

To make cereal spread on 2 teflex lined dehydrator trays dehydrate for 7-8 hours, then flip onto mesh screen and continue dehydrating for another 8-12 hours. Break into pieces once cooled and store in air tight container in fridge

To make cookies – hand mould mixture in to biscuit shape about 4cm across, place on 2 teflex lined dehydrator trays dehydrate for 7-8 hours, then flip onto mesh screen and continue dehydrating for another 8-12 hours. Once cooled store in air tight container in fridge.


Choc Fudge Balls

  • 2 cups Dates (pitted & soaked 2 hours), or use fresh dates.
  • 2 cups Almonds (soaked for 8 hrs).
  • ½ cup Organic cocoa powder.

Method

Blend dates till smooth in food processor then remover. Blend almonds in food processor until fine (nut butter consistency), add back dates and cocoa powder, mix well. Roll into balls, may also roll in desiccated coconut, and keep in fridge or freezer.


Bliss Bombs

  • 8 tbsp cacao powder
  • 8 tbsp tahini
  • 4 tbsp honey
  • 1 tbsp pepitas (soaked 2hrs)
  • 2 tbsp coconut cream

Coat with desiccated coconut


Choc peppermint balls

  • ¼ cup honey
  • ¼ cup tahini
  • ½ cup cacao powder
  • Few drops of peppermint oil

Fruit and nut balls

  • ½ cup finely chopped dried figs or prunes
  • ½ cup finely chopped dates
  • ½ cup finely chopped dried apricots
  • 1 tbsp honey
  • ½ cup finely chopped pecans
  • ½ cup finely chopped almonds

Mix thoroughly and roll into small balls, coat in coconut


Apricot coconut balls

  • 3/4 cup dried apricots soaked till soft
  • ½ tsp lemon juice
  • 1 tbsp orange juice
  • ¾ cup coconut
  • 1 tsp orange rind

Choc nut balls

  • 1 cup ground almonds
  • 1 cup ground hazelnuts
  • 1 cup ground pecans
  • ¾ cup finely chopped dried apricots
  • Or fresh dates
  • 1 tsp orange juice
  • 1tsp orange rind
  • 1 tsp maple syrup

Mix ad roll into balls rolls in mixed coconut and cacoa powder


Raw Carrot Cake

Base

  • 2 cups Sunflower seeds
  • 2 cups Raisins (soaked for 2 hrs)
  • ½ Apple
  • Blend all crust ingredients in a food processor and form into a pie pan.

Cake

  • 2 cups dates, fresh or soaked, pitted
  • 2 cups carrot pulp (left from juice)
  • 2 cups of meat from young coconut or 2 cups fresh coconut pulped
  • ¼ cvup ginger
  • 1 ½ cups frsh carrot jiice
  • ¾ cup organic raisins soaked for a few minutes and drained
  • 2 cups raw walnuts coarsely chopped
  • 1 tsp ground nutmeg
  • 1 ½ tsp cinnamon
  • 1 tsp ground cardamom

Juice carrots for pulp and juice. In blender combine coconut, dates, ginger and enough carrot juice to help blend

Transfer to mixing bowl and mix in carrot pulp, raisins, walnuts, cinnamon, cardamom and nutmeg

Press into cake tin containing the base

Whipped cream

  • 1 ½ cups raw walnuts, cashew or nut of your choice
  • Soaked in filtered water for 4 hours
  • ½ cup fresh orange juice
  • 2 tbsp maple syrup
  • A few drops of vanilla
  • Blend nuts with orange juice, maple syrup and few drops of vanilla, blend till fluffy and smooth

Cover cake

Orange glaze (optional)

  • 1 cup fresh squeezed orange juice
  • 1 tbsp porange rind
  • 1 tabsp lemnon rinf
  • ½ cup fresh dates
  • 2 tbsp fresh lemon juice
  • 2 tbsp ground cashews
  • Blend well
  • Pour over whipped cream or wait until serves and pour over
